I'm trying to create a wearable LattePanda and I need much longer cables for the LCD touch screen. Do you think it is possible to extend the touch screen with FPC extension cables for both the screen & the touch panel?

Yes it should be possible within reason. i believe its a 30pin 0.5mm pitch cable.

As for the touchscreen, you can find extensions for those too. Just know the pitch (distance between pads) and the number of "pins". Not sure how many there are for the touch screen.

Ok before you get too carried away. There's something you should do. It's called Ghetto-Lamination.
On the FRAGILE orange flat flex cables. You can use some clear packing tape on both sides of the cable. Just avoid the connection pads. And trim the tape. This "Laminates" the flat flex cables which will increase their strength considerably, decreasing the chance it'll tear.
Below, is the only picture i have where i used this Ghetto-Lamination process. Look around the orange flat-flex cable coming off the back of this 3.5" lcd. Especially the top right side. And on the narrow part of this FPC This is where i used clear packing tape to strengthen it.

Some FPCs are fragile and tear like thin paper. So strengthening them, especially the fragile sides. Is a must-do imo. Especially if it's a wearable.
