By the way, why are you going to use GSM in arduino side? in this situation, i will choose a usb gsm stick, it can be a lot of easy to develop and use.

The MCU in LattePanda is a startand Arduino Leonardo, it compatible with arduino IDE, librarys and sensors, but not compatible with shield, i think it may be caused by the small size.
I think you may need some cable to connect the shield to your LattePanda

Intel Compute Stick package maybe work for lattepanda too, but i have not tried it.

I have tested Minnowboard Max package and it work well in lattepanda, just need follow this tutorial:

There are a lot of way to read it. which platform are you going to use? c# or python or javascript? For these sensor use it own protocol, you better use it own library in arduino side and send the data you need to LattePanda via serial port. i have not tested in my LP, but it should be ok, all software work on normally win10 pc should work on LP, may be a little slow..
