Follow-up question: What am I suppose to do with the Ubuntu-img-16.04-for-CherryTrail-4G-20180716.iso file? After updating the bios and receiving the fs1:\> prompt, I remove the usb drive. As far as I know that process did not use the .iso file.

Did you try this official Ubuntu image? http://docs.lattepanda.com/content/OS/Win10HomeAndLTSB/#ubuntu-1604-lts-for-s70cr200-2g32g-version I think the kernel need to be optimized based on the MIPI display control timing. One other thing I've noticed. Even though the screen goes dark, if I press CTL-ALT-T to launch a terminal window, and type "sudo shutdown now", the ubuntu log off splash screen briefly displays on the 7" monitor before the device is shut down, so the O/S is communicating with it.

Update: I was reading on another forum posts from other users experiencing similar issues, that resolved themselves after kernel updates. I ran updates and still have the problem of the 7" monitor going dark after displaying the LattePanda splash screen and the initial Linux diagnostics output. unam...

Try checking the BIOS setting to find a display support option. I remember I tested different version of Ubuntu from LattePanda, one of them changes this part to be an option in BIOS.
