I'm trying to use the 10.1' display linked below:

But when I boot the lattepanda, on the screen it shows "Not support" on a red screen. I haven't gotten any useful help from waveshare support and would like some help with same.

Most likely it is that Waveshare HDMI device's supported resolution profile (expressed in EDID) is not supported by LP Alpha/Delta board.

Note that the LCD panel's native resolution is an unusual 1024x600.

The HDMI to MIPI-DSI converter board has an IC that does interface conversion and
maybe, just maybe, resolution scaling (say, a more common 1024x768 resolution or 1280x800.)
If it does not do that, then the only resolution it can support will be 1024x600. This is not a popular supported format at all. (Actually, by checking the URL link you provided, it has custom images for Raspberry Pi. Keyword is "custom".)
