Building Win 10 Enterprise IoT image using W SIM

New here so apologies if I'm posting on the wrong thread.
I'm currently trying the LP 4GB+64GB (Z8350) board and I was wondering if it is possible to build a Windows 10 Enterprise image using the Windows System Image Manager (W SIM) app?
I do have some experience building images for other embedded boards, but I've tried a simple image and it seems that the board hangs with a black screen on certain occasions.
After installing a simple image that I've build, the board tries to prepare Win 10, then black screen appears for quite a while. At this point I've reset the board manually and it then booted into Win desktop.
From Win desktop when I try to restart the black screen appears after shutdown, with the cursor still visible, but hangs until manual reboot.
I'm pretty sure I'm doing something wrong here, is there a way to build a Win 10 (IoT) image that way for LP or do I have to use only the official images provided?
